Quick Red Lentil Soup with bulled eye egg tossed with grilled onion and sausages.
Prep.: 30 min
Ingredients
for about 8 servings
Soup: 2 cups of red lentil; 2l filtered water; 5 cloves of garlic crushed; 2 medium sized onions chopped; 2 tbs. romain cumin; 3 tbs. olive oil; 5 medium size carrots in thick slices; 1 tbs turmeric powder; 1.5 tbs paprika powder; 3 tea spoon Himalayan Salt; 1/2 a lemon; Bulled Eye Egg: 1 Egg / person; for 2 eggs in a smaller stainless steel dish you should use 1 teaspoon of butter and a pinch of salt; Optional for serving: For 2 portions 1 medium sized red onion sliced and sliced sausages according to need;

Preparation:
Prep Time: 30 min; Cooking time: 20 min.
Soup: start with washing the lentil and soak it for 20 min. to eliminate its phytic-acid content. While it's soaking prepare the vegetables. Leave the crushed garlic on air for minimum 10 min. In this time its antibacterial and anti-carcinogenic effect is increasing by allicin generation on air. Heat up the oil in a soup pan and add the cumin. In about 30 seconds you add the onion and carrot. Simmer it for 5 minutes under lid. It's time to rinse the lentil and add to the rest with double as much water. Bring it to boil under lid, then remove the lid. After 17 minutes mash the carrots with a potato masher (it's nicer than a hand mixer, because it will be more fibrous.) Now season the soup with salt, paprika, turmeric and garlic. Cook it for another 3 minutes and there you go, the soup is ready :),
While the lentil is cooking you can prepare the bulled eye egg and grilled onion. In stainless steal dishes use butter for the egg to avoid sticking. (Avoid using non stick dishes. The lining avoidably leaks into your meal and disturbs your endocrine system.) For serving squeeze fresh lemon into the the soup!
