Benefits
Stinging nettle above ground parts are used along with large amounts of fluids for blood purification, for urinary tract infections (UTI), also for endocrine disorders, and among many others, for anemia or poor circulation.
It's a good time to pick them now in May, before they start blooming. Bring a secateur and thick gloves to protect your hands.

Stinging Nettle Pie
For 4 portions
You need: latex gloves, 3 tbs butter, 1 leek, 100 gram stinging nettle leaves (a small bawl), 6 eggs, 6 tbs flour (chickpeas, urud, plantain or sorghum flour), 2 coffee spoon Himalayan salt;
Directions: Wear latex gloves when you wash the nettle in a ball full of water first to get eventual dust off from the leaves. Then rinse them in a sieve. Cut the leek half cm thick slices and along the diameter halve each slice. Wash them to get rid of eventual earth, heat up the butter in a griddle and add the leeks. Under a lid simmer them for about 7 minutes while you cut the nettle leaves to smaller pieces still wearing the gloves. Be careful not to chop plastic into your food!!! You add the chopped nettle in to the griddle, and put the lid back for another 5 minutes. You may stir every once in awhile. In this time beat up the eggs with the flour and salt, and add this dough on the top of the greens in the griddle. Mix it all, then let it set for about 10 minutes on low fire.
If you use stainless steal dish -as I do always-, your pie may stuck to the bottom of your dish a bit. Using butter helps though. Oil would enhance sticking. Still you’d better use stainless steal, because non-stick linings contain chemical substances that are famous endocrine disruptors, and they unavoidably leak into your meal. That’s why I got rid off dishes with lining, and you are also better off eliminating them form your kitchen. And if your pie sticks to the bottom you can easily wash it off with a metal sponge, because on the contrary of lined dishes stainless steal can be cleaned well!
Cut the big pie into 4 equal pieces and one by one turn them onto another tray on low fire. This side won't stick anymore. There you bake them for 3-5 minutes further and they are ready to be served.
Stinging Nettle Tea
Simple, tasty and refreshing. They also say it purifies your blood.

For collecting stinging nettle use thicker gloves. With the time it will loose from its stinging power, but you need plastic gloves for cleaning and chopping. Just be careful not to cut any plastic into your food!
Collect it until blooming. It is not wise to eat nettles when flowering between June and October as they have a laxative effect and the plant will then contain cystolith crystals that can upset the urinary tract. The fresh growth from nettles that grow after being cut back is fine though.
Watch out for the very similar White nettles. White nettle is not stinging and is used as a herb too, so no worries if you ever mixed them up.
