Yellow Minced Meat

With any side dish you may serve it of course. I don't prepare anything with gluten, so these potato slices were perfect for my family.

Yellow Minced Meat

For 4 servings you need: 300 gram minced meat, 3 bay leaf, 4 clove garlic, 1 cabbage savoy, 1.5 medium sized onion chopped fine, 4 tbs olive oil, 1 cup coconut milk, 1/2 cup cashew (ground to thicken the sauce), 1 tee spoon turmeric powder, 3 coffee spoon Himalayan salt, 

Directions: Peel the garlic, mesh and leave it on air till use. Chop the onion, heat up the oil in a dish, add the onion and bake it until golden brown (5-7minutes); add the meat, brake it to small pieces with a fork, and mix the bay leaf ad salt in it. Cover it with a lid and let it steam for about 15 minutes with occasional stirring. When the meat is cooked, add the sliced cabbage, cook it for 5 minutes under lid, then poor the coconut milk, mix the cashew in smooth, and season with garlic and turmeric, keep it on fire for further 3 minutes and it's ready.

Indian spinach -chickpeas 

You may eat it with a variety of things actually, meat, quinoa,  chapati (Indian bread) or even rice. Here bellow I show it to you mixed with brown rice.

Ingredients for 4 servings

 1,5 cup dried chickpeas

1 kg deep frozen spinach

3 medium sized onion finely chopped

1,5 dl cream

1/2 cup ground sunflower seed 

1 tbs Ruman cumin

1 tbs black mustard seed

1 tbs mango powder

1 tbs turmeric

4 clove garlic

400 gram brown rice (optional.)

For serving: fresh lemon to squeeze on the meal.

Soak the rice and chickpeas overnight. The day next wash them off and cook both in separate dishes. When they are ready, or close to be cooked, you peel, mesh the garlic and leave it on air until use (to maximise it's antibiotic and anti carcinogenic affect).  Chop the onion fine, heat up the oil, add the seeds and when they start popping, add the onion. Under lid bake it for about 5-7 minutes, then add the spinach, and when it's all melted, cook it for 3 minutes. Then mix the chickpeas into it, the cream, the sunflower seed powder, the rest of the spices, cook them for another 3 minutes and you may serve it with squeezing fresh lemon on each portion.
