Your Cake and Cinnamon Stick Tea

Cinnamon contains a chemical that works similar to insulin, so it helps digesting carbs. Boil a 7cm long cinnamon stick in filtered water for 20 min on low heat, then switch the heat off and leave it to set for 15-20 minutes. In this last 15-20 minutes the cinnamon will release all the rest that is good about it, and will change the colour of the water to red. For quicker and a bit less efficient solution you can just soak cinnamon powder in hot water, wait until the powder setts in the bottom of your jar so you can poor the seasoned liquid in your cup.

(It may be tempting, but don’t eat more than 1 slice a day if you want to lose weight. Look at it as a treat, you don't really need it!)
Carrot fibre will drive it (400 gr.) and you will need to add 200 gr. more conventional grain to arrive to this conventional texture.
Oat flour is an easy option, especially if you have the coffee grinder, so you can grind oat flakes into oat meal in a blink for a very democratic price.
Ingredients: 400 gr. carrot fibre (left over from freshly pressed carrot juice);
100 gr. grated coconut; 200 gr. naturally gluten free oat flour; 300 gr. coconut blossom sugar;
200 gr. butter; 4 eggs (possible with 3 as well in case you want to decrease the number of eggs, with 4 it's just nicer); 1/2 tee spoon sodium bicarbonate; 1 tea spoon of cinnamon powder;
Optional: 150 gr. roughly mashed walnuts or Brazil nuts.
Warm up the oven to 175C and prepare a baking dish ready lined with baking paper or with a thin layer of butter that you sprinkle with flower.
Mix all ingredients smooth with one hand, so you can use your other hand when you need to grab something. Fill the dough into the prepared baking dish,
Smooth the top with a spatula, and bake it for 30-40 minutes.
You may serve it with chocolate dip made of 100 gr. butter melted, on the fire mixed with 3 tbs cocos sugar and 2 tbs cacao powder.
